Lobster Soup

Ingredients

Directions

Prepare the lobster

  1. Plunge the lobster(s) into a large pot half full of boiling salted water.

  2. Boil until the shell is red.

  3. Remove the lobster(s) and cool until manageable.

  4. Remove the flesh from the shell, discarding the soft fins, stomach, and intestine, but saving the coral and green fat.

  5. Cut the lobster flesh into small pieces.

Make the soup

  1. In a saucepan, melt the butter and flour over medium heat until bubbling.

  2. Gradually add the boiling water, stirring until smooth.

  3. Add the lobster pieces and season with salt and red pepper.

  4. Boil for 2-3 minutes.

  5. Serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lobster
Provides the main protein and sweet, rich seafood flavor of the soup.
Butter
Adds richness and fat, carrying flavor through the soup.
Flour
Cooked with butter into a roux that thickens the soup and gives it body.

The step that matters

Add the boiling water gradually. Adding the liquid slowly to the hot butter and flour roux, while stirring, lets the starch disperse evenly. Adding it all at once makes lumps that are hard to smooth out.
