How to Boil Terrapin
Ingredients
Directions
Prepare
Wash the terrapin by placing them in a tub or large pan filled with clean cold water for 30 minutes.
Bring a large pot of water to a boil.
Boil and loosen
Plunge the terrapin into the boiling water head first, holding them from the back to avoid bites.
Boil for 5 to 10 minutes, or until the skin on the claws or legs can be rubbed off with a wet cloth.
Remove the outer skin, then return the terrapin to the pot with enough boiling water to cover them and add 1 teaspoon of salt for each quart of water.
Boil gently until the shells begin to separate at the sides, which may take 15 to 30 minutes or longer.
Cool
Once the shells can be parted, remove the terrapin from the boiling water and let them cool until you can dress them.

What each ingredient does
- Terrapin
- The main protein; it is cooked until the skin loosens and the shells begin to part.
- Salt
- Seasons the cooking water so the meat is flavoured as it simmers.
The step that matters
Boiling gently after the skin is removed. Once the skin is off, a rolling boil can toughen the meat and break up the tender tissue. A gentle simmer cooks the terrapin evenly while the shells slowly loosen.
