Directions

Make the sauce

  1. In a saucepan, melt the butter and stir in the flour until it bubbles.

  2. Gradually add the oyster liquor and enough turkey broth to achieve a cream-like consistency.

  3. Season with salt and white pepper, then let it boil briefly.

  4. Place the saucepan in a hot water bath to keep warm.

  5. Just before serving, add the oysters and let them boil once.

Serve

  1. Dish the turkey, remove the trussing cords, and pour some oyster sauce over it.

  2. Serve the remaining sauce in a separate dish.

What each ingredient does

Butter
Adds fat and richness, and with the flour forms the base that thickens the sauce.
Flour
Thickens the sauce into a cream-like consistency when cooked with the melted butter.
Oyster liquor
Supplies the oyster flavour and liquid that forms the body of the sauce.
Oysters
Add their briny flavour and tender texture to the finished sauce.

The step that matters

Adding the oysters. Oysters cook quickly and turn rubbery and shrunken if boiled for long, so they are added just before serving and only brought to a boil once.

Swap the white pepper

How well each one fits the dish's main ingredients (flour, butter, oyster, turkey):

  1. Sagefits better
  2. Nutmegfits better
  3. Thymefits better
  4. White pepperthe original
