Ingredients

Directions

The book says “a very hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat your oven to 400°F (200°C).

  2. Place the saddle of lamb in the oven and roast for 1.5 hours for medium size or nearly 2 hours for large.

  3. Brown the lamb by exposing it to intense heat initially.

  4. Season the lamb with salt and pepper.

  5. Baste the lamb with drippings every 15 minutes.

  6. About 30 minutes before the lamb is done, prepare the cucumber sauce.

  7. Once cooked, transfer the lamb to a hot platter and serve with the cucumber sauce in a gravy boat.
