Why it works: Butter and flour are a kitchen classic. They rank in the top 12% of all ingredient pairs, and cooks put them together in 124,287 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓
Roast Widgeon
Ingredients
Directions
The book gives no oven temperature. The 400°F in the steps was added when the recipe was transcribed, as a starting point.
Prepare the birds
Pluck and singe the widgeons, then cut off the heads and claws.
Draw the birds without breaking the entrails and wipe them with a wet cloth.
Rub the birds all over with cold butter and dredge with flour.
Roast and serve
Roast them in a hot oven (400°F / 200°C) for 15 minutes or bake in a moderate oven (350°F / 175°C) for 20 minutes.
Preserve all the gravy that flows from them.
When nearly done, dust with salt and pepper.
Serve hot with the gravy and currant jelly or orange essence.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Widgeons
- Provide the main meat, which cooks through in the oven and releases the gravy.
- Cold butter
- Adds fat that keeps the skin moist and helps it brown as it roasts.
- Flour
- Dusted on the birds to help the skin brown and thicken the pan juices.
- Currant jelly or orange essence
- Adds sweetness or acidity to balance the rich, fatty meat and gravy.
The step that matters
Roast at the stated temperature and time. Widgeon is a small bird that dries out quickly, so the oven heat and timing must match closely; too long in the oven toughens the meat and loses its juices.
