Why it works: Pepper and onion are a kitchen classic. They rank in the top 11% of all ingredient pairs, and cooks put them together in 68,474 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Roast Teal

Ingredients

Directions

The book says “a very hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Pluck and singe the teal, then wipe them with a wet towel.

  2. Cut off the head and feet, and draw them without breaking the entrails.

  3. Stuff each bird with butter, salt, and pepper.

  4. Place the teal in a dripping pan with the peeled onion.

Roast

  1. Bake in a very hot oven at 400°F (200°C) for 20 minutes, or roast before the fire for 15 minutes.

  2. Baste every 5 minutes, adding more butter if needed.

  3. Season with salt just before serving.

What each ingredient does

Teal
The main meat, cooked whole so the bird stays moist and tender inside its skin.
Butter
Adds fat and moisture, keeping the meat from drying out and helping the skin brown.

The step that matters

Basting every 5 minutes. Spooning melted butter and pan juices over the birds keeps the surface moist and encourages even browning, while the meat cooks through. Skipping it risks dry, pale skin.

Swap the onion

How well each one fits the dish's main ingredients (butter, pepper):

  1. Capsicumfits better
  2. Potatofits better
  3. Carrotfits about as well
  4. Onionthe original

Fit is the average pairing score against butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
