Roast Ptarmigan
Ingredients
Directions
Keep the ptarmigan as long as possible before dressing it carefully.
Bake or roast the ptarmigan until cooked through.
Sift the bread-crumbs to ensure they are large and even.
Fry the bread-crumbs in plenty of smoking-hot fat until golden brown.
Remove the fried crumbs and place them on brown paper to drain excess grease.
Serve the ptarmigan on the fried bread-crumbs with brown gravy or bread-sauce.
