Directions

Prepare the truffles and fat

  1. Clean fresh truffles in cold water with a soft brush.

  2. If using canned truffles, remove them from the liquor and set the liquor aside for the sauce.

  3. Keep the finest truffles whole and chop the others very finely.

  4. Chop or pound the white fat of bacon until it equals ½ cup.

Roast the turkey

  1. Prepare the turkey by stuffing it with the chopped truffles and bacon fat.

  2. Roast the turkey until fully cooked, basting with the reserved liquor from the truffles.

What each ingredient does

Truffles
Provide the dominant earthy, aromatic flavour that scents the whole bird.
White fat of bacon
Adds moisture and richness to the stuffing as it melts during roasting.
Turkey
Serves as the main roasted protein that the truffle and fat flavours are built into.
Liquor from canned truffles
Carries truffle aroma into the basting liquid, adding flavour to the roasting skin.

The step that matters

Roast the turkey until fully cooked. Poultry must reach a safe internal temperature throughout, including the stuffed cavity. Basting with truffle liquor adds flavour but does not replace checking doneness, and a dense stuffing can slow heat reaching the centre.
