Sponge Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Grease a smooth cake pan or plain charlotte mold with olive oil or melted butter and dust it thickly with powdered sugar.

  3. Sift the flour and set aside.

Make the batter

  1. In a bowl, beat the yolks with ¼ cup powdered sugar until thick and creamy.

  2. In another bowl, beat the egg whites to a stiff froth, then gently mix in ⅓ cup powdered sugar.

  3. Lightly fold in one-third of the flour with the yolks, then one-third of the whites, repeating until all flour and whites are incorporated.

  4. Add the grated lemon rind during mixing, using a gentle cutting motion.

Bake

  1. Pour the batter into the prepared pan and bake until a toothpick inserted comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites trap air for lift and the yolks add richness and structure to the crumb.
All-purpose flour
Provides the starch and gluten that set the cake's structure as it bakes.
Powdered sugar
Sweetens the batter and helps stabilise the whipped egg whites.
Olive oil or melted butter
Greases the pan so the delicate cake releases cleanly after baking.

The step that matters

Folding the flour and whites. Folding gently keeps the air in the beaten whites. Stirring hard or deflating the batter makes the sponge dense and flat instead of light.

Swap the lemon
