Forest- City Lemon-pie

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Line a deep pie plate with the pastry crust.

Make the filling

  1. In a saucepan, mix the lemon rind and juice, raisins, cracker crumbs, boiling water, and sugar.

  2. Stir the mixture over heat until it boils.

  3. Pour the filling into the pie crust.

Assemble and bake

  1. Cover with an upper crust, wetting the edges to seal.

  2. Brush the crust with the beaten egg and make two or three small cuts in it.

  3. Bake until the crust is nicely browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lemons
Provide the sharp acidity and aroma that define the filling's flavor.
Raisins
Add chewy texture and concentrated sweetness to the filling.
Cracker crumbs
Thicken the filling by absorbing liquid as it cooks.
Sugar
Sweetens the filling and balances the tartness of the lemon.
Beaten egg
Gives the top crust a glossy surface and helps it brown.

The step that matters

Stir the filling until it boils. The cracker crumbs only thicken the filling once it reaches a boil, so stopping early can leave it runny and make the pie slice poorly.

Swap the lemon

How well each one fits the dish's main ingredients (raisin, sugar, egg):

  1. Vanillafits better
  2. Figfits better
  3. Lemonthe original
  4. Datesfits about as well

Fit is the average pairing score against raisin, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
