Why it works: Mustard and vinegar are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 14,067 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Prawns (in the method)
- Provide the main cooked protein, which turns firm and opaque as the heat sets it.
- Coarse sea salt
- Seasons the boiling water so the prawns take on flavour as they cook.
The step that matters
Boil the prawns for 15 minutes. Boiling too long toughens prawn flesh as proteins over-tighten and squeeze out moisture, so timing must be watched closely.
Swap the parsley
How well each one fits the dish's main ingredients (mustard, vinegar):
- Tarragonfits better
- Capersfits better
- Dillfits better
- Parsleythe original
Fit is the average pairing score against mustard, vinegar. Candidates are from the same food group and used in at least 100 recipes.
