Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Duck
Provides the main meat and fat that flavour the stewing liquid.
Beef gravy or drippings
Supplies the cooking liquid and savoury meaty flavour for the stew.
Green peas
Soften during simmering and add sweetness and body to the stew.
Butter rolled in flour
Flour thickens the stewing liquid into a richer, glossier sauce as it boils.
Onions
Break down while stewing, adding sweetness and depth to the sauce.

The step that matters

Incorporate the butter rolled in flour. Flour needs to be whisked or stirred into the hot liquid and brought to a boil so its starch swells and thickens the sauce. Added in lumps or not boiled long enough, the sauce stays thin or tastes raw.

Swap the mint
