What each ingredient does

Celery
Forms the body of the sauce and gives it its main flavour.
Butter
Adds richness and fat, carrying flavour and smoothing the texture.
Flour
Thickens the sauce when cooked with the butter, giving it body.
Cream or egg yolks
Enriches the sauce and gives it a smooth, thicker texture.
Veal broth or gravy
Adds savoury depth and liquid for stewing the celery.

The step that matters

Stewing the celery until quite soft. Celery must be fully tender before blending or thickening, otherwise the sauce stays fibrous and grainy. Stewing gently in the broth lets the cell walls break down and the flavour develop evenly.
