Beef-steak Pie

Oven, in the book's wordsA fierce oven

Ingredients

Directions

The book says “a fierce oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the beef

  1. Trim the coarse skin and excess fat from the steak.

  2. If the beef is tough, gently beat it with a rolling pin until tender.

  3. Cut the beef into slices about half the size of your hand.

Assemble the pie

  1. Place the beef in a dish lined with pastry.

  2. Season with salt, pepper, or cayenne, and add enough water to create gravy.

  3. Cover with pastry, brushing the edges with egg or cold water to seal.

  4. Trim the edges and cut a small slit in the center of the cover.

  5. Decorate the pie as desired.

Bake

  1. Bake in a preheated oven at 350°F (175°C) for about 1 hour and 20 minutes.

  2. For a richer pie, layer in oysters and add their strained liquor to the gravy.

What each ingredient does

Rump steak
Provides the meat that becomes tender and flavorful during the long, slow bake.
Egg
Brushed on the edges, it helps the pastry seal and gives the top a golden browned finish.
Pastry
Encloses the beef and gravy, holding in moisture while forming the crust.
Water
Forms the gravy with the beef juices, adding moisture as the pie cooks.

The step that matters

Sealing the pie. If the edges are not sealed well, the gravy can bubble out and escape during baking, leaving the filling dry and the crust soggy or poorly joined.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (pepper, egg, oyster, mushroom):

  1. Capsicumfits better
  2. Shallotfits better
  3. Asparagusfits better
  4. Onionthe original

Fit is the average pairing score against pepper, egg, oyster, mushroom. Candidates are from the same food group and used in at least 100 recipes.
