Vermicelli Pudding

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the custard base

  1. Drop the vermicelli into the boiling milk and simmer gently for 10 minutes, stirring occasionally until thick.

  2. Mix in the sugar, butter, and salt until well blended.

  3. Pour the mixture out and beat for a couple of minutes to cool slightly.

  4. Gradually add the whisked eggs and lemon rind.

Bake

  1. Just before baking, stir in the brandy.

  2. Bake in a preheated oven at 350°F (175°C) for 30 to 45 minutes.

What each ingredient does

Eggs
Bind the mixture and set it into a tender, custard-like pudding as it bakes.
Vermicelli
Thickens the milk as it simmers and gives the pudding its body.
Milk
Forms the liquid base that the pasta cooks in and the eggs set into custard.
Sugar
Adds sweetness and helps the pudding brown lightly at the surface.
Butter
Adds richness and a smooth, tender texture to the pudding.

The step that matters

Adding the eggs after cooling. Eggs scrambled by hot mixture turn grainy. Beating the mixture to cool it slightly before gradually adding the whisked eggs helps them blend smoothly and set evenly in the oven.

Swap the lemon
