The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Gelatin-like setting agent that firms the juice into a sliceable jelly as it cools.
Orange juice
Provides the main flavor and liquid bulk of the jelly.
Sugar
Adds sweetness and balances the tartness of the citrus.
Lemon juice
Adds acidity to sharpen the orange flavor, added to taste.

The step that matters

Skim without boiling. Boiling the mixture after the isinglass is added can cloud the jelly and weaken its set, so it should be skimmed clean over gentle heat without boiling.
