Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the custard as they set, giving it a rich, smooth texture.
Egg whites
Add protein that helps the custard set and gives it lightness.
Milk
Forms the liquid base that the eggs set into a tender custard.
Cream
Adds fat for a richer, silkier mouthfeel.
Loaf sugar
Sweetens the custard and balances the eggs.

The step that matters

Gradually stir the boiling mixture into the eggs. Adding hot liquid to eggs too quickly can scramble them. Pouring slowly while stirring warms the eggs gently so the custard stays smooth.
