What each ingredient does

Chestnuts
The main ingredient, which softens and turns tender when boiled in water.
Coarse sea salt
Seasons the boiling water so the chestnuts take on a mild salty flavour.

The step that matters

Boil the chestnuts for 30 to 60 minutes, checking occasionally for doneness.. Chestnuts need enough time in boiling water for the starches to soften fully. Undercooked nuts stay firm and chalky, while overcooking makes them mushy. Checking during boiling catches the point where they are tender.
