What each ingredient does

Eggs
Yolks add richness and color, while minced whites add body and a soft, textured bite to the sauce.
Butter
Melted butter adds fat, richness and a smooth mouthfeel that carries the egg pieces.

The step that matters

Boil the eggs for 15 minutes, then chill them completely. Overcooking causes a dry, grey-green ring around the yolks. Chilling in cold water stops the cooking and helps the shells separate cleanly for peeling.
