Knuckle of Veal with Rice or Green Peas

Ingredients

Directions

  1. Place the knuckle of veal in a pot and cover it with water.

  2. Bring the water to a slow boil, skimming off any scum that forms.

  3. If using, add green peas after skimming the scum.

  4. Add 1 teaspoon of coarse sea salt and simmer for 30 minutes.

  5. Stir in the washed rice and continue to simmer for another 1.5 hours until both the meat and rice are tender.

  6. Season with cayenne and mace 20 to 30 minutes before serving, adjusting salt as needed.

  7. Season the stew with white pepper and omit mace if using peas.

  8. Optionally, add sliced cucumbers or shredded young lettuces for flavor.

  9. For a richer flavor, substitute veal broth for water.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal knuckle
Provides meat and collagen that give the stew body and a rich, savory flavor.
Rice
Thickens the stew as its starch swells and softens during simmering.
Green peas
Adds sweetness and a tender texture to the stew.

The step that matters

Skimming the scum as the water comes to a boil. Scum is coagulated protein and impurities that cloud the broth and can taste bitter. Removing it early keeps the stew clear and clean-flavored.

Swap the peas
