To Roast Ducks

Ingredients

Directions

Prepare

  1. Remove the heads and necks from the ducks, leaving the feet on.

  2. Hold the ducks in boiling water for a few minutes to loosen the skin, then peel it off.

  3. Wash the insides of the ducks with water and wipe the outsides with a dry cloth.

  4. Stuff the ducks with a mixture of minced onions, sage, salt, pepper, and butter, if desired.

  5. Cut off the pinions at the first joint and truss the feet behind the backs.

Roast and serve

  1. Spit the ducks firmly and roast them over a brisk fire, basting constantly.

  2. When the breasts are plumped and steam draws towards the fire, serve quickly with brown gravy.

What each ingredient does

Ducks
Provide the main meat; their fat renders during roasting, keeping the flesh moist and browned.
Onions
Add moisture and a mild sweetness to the stuffing as they soften and flavour the cavity.
Sage
Adds a savoury, aromatic herbal flavour that pairs well with rich duck fat.
Butter
Adds fat and richness to the stuffing, helping the meat taste juicy and flavourful.

The step that matters

Basting constantly over a brisk fire. Duck skin holds a lot of fat that must render out while the surface crisps. Frequent basting keeps the meat from drying and helps the skin brown evenly without scorching.
