To Roast Pigeons

Ingredients

Directions

  1. Dress the pigeons while very fresh. Remove heads, necks, and toes at the first joint. Draw them carefully to avoid breaking the gall bladders.

  2. Rinse the pigeons with plenty of water, wipe them dry, and place a small piece of butter dipped in cayenne inside each bird.

  3. Truss the wings over the backs and roast the pigeons at a brisk fire, basting constantly with butter.

  4. Roast for about 18 to 20 minutes, longer if large, and serve with brown gravy and a tureen of parsley and butter.

  5. For presentation, serve on a bed of young watercress.
