Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the mixture and set into a firm, custard-like pudding as they cook.
Bread crumbs
Form the body of the pudding and soak up the milk to hold its shape.
Milk
Provides the liquid that soaks the crumbs and cooks into a soft custard.
Sugar
Adds sweetness and balances the savory notes of the milk and eggs.
Butter
Adds richness and fat for a tender texture.

The step that matters

Boil for exactly 1 hour and 10 minutes. Eggs set as they heat, so too little time leaves the pudding loose and too much can make it rubbery. Keep the water boiling steadily and the cloth tight so the mold cooks evenly.

Swap the nutmeg

How well each one fits the dish's main ingredients (milk, sugar, bread, butter, egg):

  1. Cinnamonfits about as well
  2. Nutmegthe original
  3. Parsleyfits less well
  4. Capersfits less well

Fit is the average pairing score against milk, sugar, bread, butter, egg. Candidates are from the same food group and used in at least 100 recipes.
