The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Lemon and sugar barely smell alike, yet cooks put them together in 53,532 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Gelatin-like setting agent that forms the jelly's firm structure as it cools.
Orange juice
Provides the main flavor and liquid base of the jelly.
Sugar
Adds sweetness and balances the tartness of the juice.
Lemon juice
Adds acidity to brighten the flavor of the orange.
Water
Dissolves the isinglass so it can be evenly distributed through the mixture.

The step that matters

Skim the mixture clean without boiling. Boiling can cloud the jelly and break down the setting power of isinglass, so the mixture should be skimmed gently and kept below a boil.
