Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Large mealy potatoes
Starch that breaks down when boiled and pulped, giving the soup its body.
Onion
Adds savoury sweetness and aroma as it softens in the cooking water.
Good cream
Adds richness and a smooth, silky mouthfeel to the finished soup.
Butter
Adds fat for richness and a rounder, smoother flavour.

The step that matters

Do not boil the soup after adding the cream. Cream can curdle or separate when boiled, which makes the soup grainy and loses its smooth texture. Stir it in just before serving and keep the soup hot but not boiling.

Swap the onion

How well each one fits the dish's main ingredients (potato, butter, pepper, cream):
