An Irish Stew

Why it works: Potato and onion are a kitchen classic. They rank in the top 3% of all ingredient pairs, and cooks put them together in 9,023 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

An Irish Stew

Ingredients

Directions

The book gives no oven temperature. The 350°F in the steps was added when the recipe was transcribed, as a starting point.

Prepare and layer

  1. Cut the square ends off the bones of the lamb chops.

  2. Layer the chops, sliced potatoes, and onions in an iron pot.

  3. Add 1 quart of water and cover the pot tightly.

Stew and serve

  1. Stew on moderate heat (350°F/175°C) for 2 hours until the potatoes are nearly mashed and have absorbed the liquid.

  2. Serve hot without any sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lamb chops
Provide the meat that becomes tender during the long, slow stew.
Potatoes
Break down during stewing to thicken the liquid and give the stew body.
Onions
Soften and release sweetness into the cooking liquid.

The step that matters

Keeping the pot covered during stewing. A tightly covered pot traps steam so the liquid cannot evaporate too quickly. This keeps the meat and potatoes moist while they cook slowly and become tender.

Swap the onion

How well each one fits the dish's main ingredients (lamb, potato):

  1. Asparagusfits better
  2. Okrafits better
  3. Spinachfits better
