Vegetable Pie

Ingredients

Directions

  1. Scald and blanch the broad beans.

  2. Cut the young carrots, turnips, artichoke bottoms, mushrooms, onions, lettuces, parsley, celery, and add peas.

  3. Make a nice stew with the vegetables and a little good veal gravy; season with pepper and coarse sea salt.

  4. Bake a pie crust over a dish, with a little lining around the edge.

  5. When baked, pour the stew into the dish and lay the crust over it.

  6. For a richer flavor, add a cup of cream to the stew.
