Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Melt the butter in warm milk and stir in the sugar until well combined.

  2. If using, substitute the milk and butter with rich cream.

  3. Beat the eggs until very light, then gradually add them to the mixture, alternating with the pumpkin.

  4. Stir in the rose-water, wine, mace, cinnamon, and grated nutmeg until well mixed.

Bake

  1. Pour the mixture into a buttered dish and bake at 350°F (175°C) for 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the pudding and give it structure as it bakes.
Butter
Adds richness and a tender, fat-smooth texture.
Pumpkin
Provides moisture, body, and the main flavour of the pudding.
Sugar
Adds sweetness and helps soften the texture.
Milk
Thins the batter and carries the other ingredients evenly.

The step that matters

Adding the eggs gradually. Beating the eggs until light and adding them slowly, alternating with the pumpkin, helps the mixture blend smoothly and reduces the risk of curdling or lumps.
