What each ingredient does

Cauliflowers
Provide the firm, crisp vegetable that the brine preserves and flavours.
Vinegar
Acidity that preserves the cauliflower and gives the pickle its sharp taste.
Coarse sea salt
Draws out moisture from the cauliflower so it stays firm and crisp.
Coriander seed
Adds warm, citrusy aroma to the pickling liquid.
Turmeric
Gives the pickle its yellow colour and an earthy flavour.
Mustard seed
Adds pungent, sharp flavour to the pickling spices.

The step that matters

Scalding without boiling. Scalding in salted water just below boiling softens the cauliflower slightly while keeping it firm. Boiling would make it limp and cause it to lose colour and texture.
