Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make the batter

  1. In a large bowl, cream the butter and sugar together until light and fluffy.

  2. Add the eggs one at a time, mixing well after each addition.

  3. Stir in the milk.

  4. In a separate bowl, combine the flour and baking powder.

  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.

  6. If making spice cake, add molasses, spices, and raisins.

Bake

  1. Pour the batter into a loaf pan or layer pans.

  2. Bake for 30-40 minutes or until a toothpick inserted in the center comes out clean.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Butter and flour barely smell alike, yet cooks put them together in 124,287 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with sugar to trap air, giving a light, tender crumb and rich flavor.
Sugar
Creams with butter to aerate the batter and adds sweetness and gentle browning.
Flour
Forms the main structure that sets as the cake bakes.
Eggs
Bind the batter, add structure and moisture, and help it set when baked.
Baking powder
Releases gas during baking so the cake rises and becomes light.
Milk
Adds moisture and hydrates the flour to form the batter.

The step that matters

Gradually add the dry ingredients to the wet mixture, mixing until just combined.. Once flour meets liquid, gluten begins to form. Mixing only until combined keeps the crumb tender rather than tough and dense.

Swap the raisin

The recipe marks raisin as optional. How well each one fits the dish's main ingredients (butter, sugar, flour, milk, egg, molasses):

  1. Raisinthe original
  2. Vanillafits about as well
  3. Figfits less well
  4. Peachfits less well

Fit is the average pairing score against butter, sugar, flour, milk, egg, molasses. Candidates are from the same food group and used in at least 100 recipes.
