Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Wash rhubarb and remove fibrous skin.

  2. Cut rhubarb into 1 inch lengths.

Bake and serve

  1. Arrange rhubarb in a baking dish, sprinkling a little light brown sugar and preserved ginger over each layer.

  2. After the last layer, pour boiling water over the rhubarb.

  3. Cover closely and bake at 300°F (150°C) for 15 to 20 minutes, or until tender.

  4. Serve hot with cream.
