Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lobsters
Provide the main flavor and the body of the filling.
Bread
Adds moisture and binds the filling so it holds its shape.
Eggs
Bind the mixture and set when cooked, helping the croquettes hold together.
Crackers
Form a crisp, browned crust that protects the soft filling during frying.

The step that matters

Frying the croquettes. Lard must be hot enough to brown the crumb coating quickly; if the oil is too cool, the croquettes absorb fat and can fall apart or turn greasy before the centre is heated through.
