Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the bulk of the rolls, giving a soft, starchy interior.
Eggs
Bind the potato mixture so the rolls hold their shape.
Flour
Coats the outside so the rolls brown and crisp when fried.
Lard
Fries the rolls in hot fat, browning the surface and adding richness.

The step that matters

Frying the rolls in hot lard. If the lard is not hot enough, the flour coating absorbs fat and the rolls become greasy and pale instead of crisp. Enough heat sets the coating quickly and gives golden browning through the Maillard reaction.
