Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Gelling agent that sets the mixture into a firm, sliceable body as it chills.
Egg whites
Whipped into foam that gives the dessert a light, airy structure.
Granulated sugar
Adds sweetness and softens the set texture.
Lemon juice
Adds acidity that brightens the flavour and balances the sugar.

The step that matters

Beat in the mixture only after it has thickened on ice. If the mixture is still warm or runny, it will deflate the beaten egg whites. Lightly thickened, chilled mixture keeps the foam's air intact and sets evenly as it cools.

Swap the lemon
