Scalloped Oysters

Ingredients

• oysters
• cracker crumbs
• butter
• salt
• pepper

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

1. Preheat the oven to 400°F (200°C).

2. If using shells, clean them thoroughly. Roll oysters in cracker crumbs.

3. In the shell, layer cracker crumbs, two or three oysters, more crumbs, a pinch of salt and pepper, and a little butter. Repeat layers.

4. If using a dish, butter the bottom and sprinkle with cracker crumbs. Warm oysters briefly in their liquor, then layer them in the dish.

5. Sprinkle with salt, pepper, and butter between layers. Top with more cracker crumbs and a star of whole oyster crackers.

6. Bake until hot and plump, then remove immediately to avoid overcooking.
