Delicate Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make the batter

  1. In a bowl, cream the softened butter and sugar together until light and fluffy.

  2. Beat the egg whites until frothy and gently fold them into the butter mixture.

  3. Sift in the flour and grated nutmeg, and mix until just combined.

  4. Add lemon extract or rose water if desired.

Bake

  1. Pour the batter into a paper-lined pan.

  2. Bake for about 30-40 minutes or until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar to trap air, giving the cake a tender, rich crumb.
Egg whites
Whipped to add air and lift, helping the cake rise and stay light.
Flour
Provides the structure that sets as the cake bakes.
Fine white sugar
Creams with the butter to aerate the batter and adds sweetness and gentle browning.

The step that matters

Folding in the egg whites. Folding gently keeps the air beaten into the egg whites. Stirring vigorously deflates the batter, which can leave the cake dense instead of light.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (sugar, flour, butter, egg, nutmeg, rose, almond):

  1. Raisinfits better
  2. Vanillafits better
  3. Figfits about as well
  4. Lemonthe original

Fit is the average pairing score against sugar, flour, butter, egg, nutmeg, rose, almond. Candidates are from the same food group and used in at least 100 recipes.
