Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Provide the main meaty texture of the salad after parboiling and cubing.
Thick cream
Beaten until stiff, it forms a rich, thick dressing that coats the salad.
Vinegar
Adds acidity that sharpens the flavor of the rich cream dressing.
Cucumber
Adds cool, crisp texture and fresh moisture to the salad.

The step that matters

Beating the cream until stiff. Cream must be whipped to the right stiffness before the vinegar is added gradually. Adding vinegar too early or too quickly can stop the cream from thickening and make the dressing loose.

Swap the cucumber

How well each one fits the dish's main ingredients (pepper, cream, vinegar):

  1. Capsicumfits better
  2. Mustardfits better
  3. Horseradishfits about as well
  4. Cucumberthe original

Fit is the average pairing score against pepper, cream, vinegar. Candidates are from the same food group and used in at least 100 recipes.
