Sponge Jelly Roll

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Beat the yolks of the eggs until thick.

  2. Gradually add the sugar, lemon rind, and lemon juice.

  3. Beat the egg whites until stiff and fold half into the yolk mixture with ½ cup of flour.

  4. Fold in the remaining egg whites and another ½ cup of flour.

Bake and roll

  1. Bake in a large baking pan at 400°F (200°C) for about 15 minutes.

  2. Turn the cake onto a cloth, trim the edges, spread with jelly, and roll tightly.

  3. Wrap in the cloth and set aside to cool.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites and beaten yolks provide the light, airy structure of the sponge.
Sugar
Sweetens the batter and helps the beaten eggs hold their foam.
All-purpose flour
Provides the starch and gluten that set the sponge so it can be rolled without cracking.
Lemon juice
Adds acidity that brightens the flavour and helps stabilise the egg foam.

The step that matters

Fold the whites gently. Folding keeps the air trapped in the stiffly beaten egg whites. Overmixing or deflating them makes the sponge dense and less able to rise in the oven.

Swap the lemon

How well each one fits the dish's main ingredients (egg, sugar, flour):

  1. Raisinfits better
  2. Vanillafits better
  3. Lemonthe original
  4. Figfits about as well

Fit is the average pairing score against egg, sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
