Directions

Prepare the potatoes

  1. Wash and peel the potatoes, then soak them in cold water for 30 minutes.

  2. Boil the potatoes until very soft.

  3. Drain the water from the potatoes and mash them.

Make the soup

  1. In a double boiler, cook the onion and celery with the milk.

  2. Add the boiling milk and seasonings to the mashed potatoes.

  3. Strain the mixture and bring it back to a boil.

  4. In a small saucepan, melt the butter until bubbling, then add the flour and mix well.

  5. Stir the flour mixture into the boiling soup and let it boil for 5 minutes.

Serve

  1. Serve very hot. If the soup is too thick, add more hot milk.

What each ingredient does

Potatoes
Provide the starchy body that gives the soup its thick, smooth texture once mashed.
Milk
Supplies liquid and richness, carrying the flavour and softening the mashed potato into a creamy soup.
Flour
Thickens the soup as its starch swells in the hot liquid, giving body to the cooked mixture.
Butter
Adds fat and richness, and is cooked with the flour to form a roux that helps thicken the soup.

The step that matters

Stirring the flour mixture into the boiling soup. Flour added to hot liquid can clump if not mixed well first. Cooking the butter and flour together as a roux and whisking it in while the soup boils helps it disperse smoothly and thicken evenly as the starch swells.
