Lobster Soup, or Bisque of Lobster

Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Cook the lobster in boiling water until done, then remove the meat and chop it finely.

  2. In a pot, melt butter and sauté chopped onion, celery, and carrot until soft.

  3. Stir in flour and cook for a minute, then gradually add water and milk, stirring constantly.

  4. Add the chopped lobster, season with salt and pepper, and simmer for 15 minutes.

  5. Serve hot.
