Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Grated raw potatoes
Provide the bulk of the cake and its starchy body once fried.
Eggs
Bind the grated potato together so the cakes hold their shape.
Flour
Absorbs moisture and helps the batter cling together while frying.
Baking powder
Releases gas that lightens the cakes and gives them a little lift.
Lard
Conducts heat for frying and promotes browning on the outside of the cakes.

The step that matters

Frying over medium-high heat. The mixture must go into hot lard so the outside sets and browns quickly; cooler fat lets the grated potato absorb grease and turn soggy before the centre cooks through.

Swap the potato

How well each one fits the dish's main ingredients (egg, flour):

  1. Arrowrootfits better
  2. Chivefits better
  3. Shallotfits better
  4. Potatothe original

Fit is the average pairing score against egg, flour. Candidates are from the same food group and used in at least 100 recipes.
