Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat oven to 350°F (175°C).

Make the filling

  1. In a bowl, combine the juice and grated rind of the orange and lemon.

  2. Add the sugar, butter, and egg yolks to the mixture and mix well.

  3. In a separate bowl, beat the egg whites until stiff peaks form.

  4. Gently fold the egg whites into the orange mixture.

Bake

  1. Pour the filling into tart shells and bake until set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks enrich and thicken the filling, while whites beaten to stiff peaks lighten its texture.
Sugar
Sweetens the filling and balances the sharp citrus acidity.
Butter
Adds fat for a rich, smooth texture in the filling.
Orange and lemon juice
Provides the main citrus flavour and acidity, and helps the filling set.

The step that matters

Folding the egg whites into the orange mixture. Whipped egg whites trap air that gives lightness. Folding gently keeps that air in; stirring vigorously knocks it out, leaving a denser, flatter tart.

Swap the orange

How well each one fits the dish's main ingredients (lemon, sugar, butter, egg):

  1. Vanillafits about as well
  2. Orangethe original
  3. Raspberryfits about as well
  4. Figfits about as well

Fit is the average pairing score against lemon, sugar, butter, egg. Candidates are from the same food group and used in at least 100 recipes.
