Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the custard as they cook, thickening the mixture into a smooth, spoonable texture.
Sugar
Adds sweetness and helps balance the sharpness of the lemon.
Butter
Adds fat, giving the custard a rich, smooth mouthfeel.
Lemons
Supply acidity and aroma from the juice and rind.

The step that matters

Adding the beaten eggs to the hot mixture. If the eggs are added too slowly or the mixture is too hot, they can scramble. Stirring quickly while cooking gently lets the egg proteins thicken the custard evenly and keeps it smooth.
