To Clean Tripe
Ingredients
Directions
Rinse the tripe in cold water after emptying it.
Make a strong lye and pour it hot over the tripe; let it soak for 3 hours.
Fasten the tripe to a board with tacks and scrape the inner skin off with a knife.
Sprinkle with lime, cover with warm water, and soak for 2 hours; scrape again.
If the dark comes off, it is clean; if not, repeat sprinkling with lime and soaking.
Cover with salt water and soak for 3 days, adding clear brine each day.
Cut into 6-inch squares, soak in buttermilk for 1 day, rinse, and boil in clear water until very tender.
