Sweet Breads Larded
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Soak the bread in cold water and salt for 1 hour.
In a pot, combine 1 quart of cold water and 1 tablespoon of salt; bring to a slow boil.
Cool the bread in cold water until manageable.
Lard the bread with strips of dry salted fat pork.
Bake in a 400°F (200°C) oven for 15 minutes until slightly browned.
Prepare a garnish of your choice, such as French green peas, mushrooms, string beans, or a plain white sauce.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
