The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the pudding

  1. Soak 1 cup of tapioca in 1 quart of milk for 2 hours.

  2. Add ½ cup sugar, 1 cup raisins, 3 beaten egg yolks, and ¼ teaspoon salt.

  3. Bake in a 300°F (150°C) oven for 1 hour.

Top and brown

  1. Beat the egg whites to a stiff froth.

  2. Add 2 tablespoons sugar and lemon flavor to the beaten egg whites.

  3. Spread the egg white mixture over the pudding and brown it.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells in the milk during soaking and sets the pudding into a soft, thick body.
Milk
Forms the liquid base that the tapioca absorbs and the custard is built on.
Egg yolks
Add richness and help the pudding set as it bakes.
Egg whites
Whipped into a stiff froth to form a light topping that browns in the oven.
Sugar
Adds sweetness and helps the egg white topping brown.

The step that matters

Spreading and browning the egg white topping. Whipped whites need to be beaten to a stiff froth before spreading, otherwise the topping will be dense and may slide or weep. Browning depends on the sugar and heat, so the topping must be watched closely to brown without scorching.
