Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the filling

  1. Cream the butter and sugar together.

  2. Add the beaten egg yolks and mix well.

  3. Fill tart shells with the mixture.

Top and bake

  1. For the meringue, beat the egg whites with 4 tablespoons of sugar and 1 teaspoon of lemon extract.

  2. Spread the meringue over the filled tart shells.

  3. Brown lightly in a 400°F (200°C) oven.

Optional richer version

  1. For a richer pudding, add 1 cup of cream to the mixture.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Add richness and help the filling set as it bakes.
Butter
Adds fat for a tender, rich texture.
Sugar
Sweetens the filling and helps the meringue brown.
Egg whites
Whipped into a foam that gives the meringue its light structure.

The step that matters

Browning the meringue lightly. Sugar and egg white proteins brown quickly in a hot oven. Stopping once the top is light golden keeps the meringue tender and prevents it from turning tough or weeping.
