Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Head
Supplies the gelatine-rich connective tissue that binds the chopped meat into a firm set.
Tongue
Adds rich, meaty flavour and tender texture to the chopped mixture.
Heart
Contributes lean, dense meat that adds bulk and savoury depth.
Liver
Adds a strong, rich flavour and deepens the savoury character of the mixture.
Sage
Provides aromatic herbal flavour that complements the rich meats.

The step that matters

Remove all bones from the head. Bone fragments left in the chopped meat are hard to notice and can be unpleasant or unsafe to bite into, so thorough removal before chopping matters.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (liver, pepper, sage):

  1. Carrotfits better
  2. Capsicumfits better
  3. Mustardfits better
  4. Onionthe original

Fit is the average pairing score against liver, pepper, sage. Candidates are from the same food group and used in at least 100 recipes.
