Crab Apple Jelly

Ingredients

Directions

Prepare the juice

  1. Wash and quarter the crab apples and cover them with water.

  2. Stew the apples until they are well broken.

  3. Pour the mixture into a jelly bag and drain without squeezing.

  4. For added flavor, boil a stick of cinnamon with the juice and remove it before adding the sugar.

  5. Boil the juice alone for 10 to 15 minutes.

Add the sugar

  1. Heat the sugar while the juice is boiling, then add it slowly, stirring constantly.

  2. If the mixture begins to jelly before all the sugar is dissolved, it requires little boiling.

What each ingredient does

Crab apples
Provide pectin and acid, which allow the juice to set into a jelly.
Sugar
Sweetens the jelly and helps it set firmly as it thickens.
Water
Covers the apples so they soften and release their juice when stewed.

The step that matters

Adding the sugar slowly while stirring constantly. Sugar added all at once or without stirring can fail to dissolve evenly and may crystallize or scorch on the bottom of the pan. Dissolving it fully before the jelly sets keeps the texture smooth and clear.
