Ground Rice Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the rice base

  1. Mix 3 tablespoons of ground rice with a little cold milk.

  2. Stir the mixture into 1 quart of boiling milk and let it boil for about 15 minutes, stirring constantly.

Finish and bake

  1. Once cooled, add 4 eggs, lemon to taste, and sugar to taste.

  2. Pour the mixture into a lined dish or bake without lining.

  3. Bake at 350°F (175°C) for 1 hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ground rice
Thickens the milk as its starches swell and gelatinize during boiling, giving the pudding body.
Milk
Forms the main liquid base and provides creaminess and milk sugars for browning.
Eggs
Set during baking to give the pudding a firm, custard-like structure and richness.
Sugar
Adds sweetness and helps with browning on the surface during baking.

The step that matters

Stir the rice into boiling milk. Ground rice must be fully mixed in and stirred constantly, or it clumps and scorches on the bottom of the pan. Cooking it long enough lets the starch swell and thicken the milk evenly.

Swap the lemon

How well each one fits the dish's main ingredients (rice, milk, egg, sugar):

  1. Vanillafits better
  2. Coconutfits better
  3. Figfits about as well
  4. Lemonthe original

Fit is the average pairing score against rice, milk, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
